Bu çalışmada, sakkaroz, sakaroz yerine stevia bitkisinden elde edilen stevia Reb D, ticari stevia şekeri ve bazı gıda katkı maddeleri (maltodekstrin, izomalt, inülin, polidekstroz) kullanarak enerjisi azaltılmış alıç marmelatı üretilmesi ve üretilen marmelatların bazı özelliklerinin belirlenmesi amaçlanmıştır. Alıç marmelatı üretiminde 4 farklı formülasyon kullanılarak üretim gerçekleştirilmiştir. Üretilen alıç marmelatlarının suda çözünür kuru madde, toplam kuru madde, pH, titrasyon asitliği, kül, su aktivitesi, renk, toplam fenolik madde, ABTS katyon radikali giderme aktivitesi ve duyusal analizleri gerçekleştirilmiştir. Toplam fenolik madde miktarı açısından en yüksek değere 4. reçete ile üretilen örnek (668.83 µg GAE/g) sahip olurken, ABTS katyon radikalini giderme aktivitesi açısından en yüksek değer 1. reçete ile üretilen örneğin (1798.13 µg TE/g) sahip olduğu belirlenmiştir. Enerji değerinde azalmalar incelendiğinde; %100 sakkaroz kullanılarak üretilen marmelat örneğinin (1. reçete) enerji değeri 100 kabul edilmiştir. %50 sakkaroz kullanılarak üretilen marmelatın (2. reçete) enerji değerinde %26.75, sadece stevia Reb D kullanılarak üretilen marmelatın (3. reçete) enerji değerinde %53.50, ticari stevia şekeri kullanılarak üretilen marmelatın (4. reçete) enerji değerinde %73.75 oranında bir azalma olduğu belirlenmiştir. Duyusal analiz sonuçları değerlendirildiğinde, marmelat örnekleri arasında en çok beğenilen 1. reçetenin uygulandığı marmelat örneği olmuştur. 2. reçete ve 3. reçete uygulanarak üretilen marmelat örnekleri ise birbirine yakın puanlar alarak 2. ve 3. sırayı takip etmiştir. Elde edilen bulgulara göre, alıç marmelatı üretiminde şeker yerine farklı tatlandırıcıların kullanımı ile tüketiciler tarafından beğenilen ürünlerin üretilebileceği belirlenmiştir.
In this study, it was aimed to produce energy-reduced hawthorn marmalade using sucrose, stevia Reb D obtained from stevia plant, commercially stevia sugar instead of sucrose and food additives (maltodextrin, isomalt, inulin, polydextrose) and then determine some properties of marmalades. Four different formulations were used in hawthorn marmalade production. Hawthorn pulp, pectin and water ratios are constant for all formulations. Soluble solids (°Brix), total dry matter, pH, titration acidity, ash, water activity, colour values, total phenolic compounds, ABTS cation radical scavenging activity of marmalades produced with hawthorn were determined. Moreover, Marmalade samples were evaluated for their sensory properties. The fourth formulation (668.83 µg GAE/g) had the highest value in total phenolic content, while the first formulation (1798.13 µg TE/g) had the highest ABTS cation radical scavenging activity. When the reductions in energy value were examined, the energy value of the marmalade sample produced using 100% sucrose (first formulation) was assumed to be 100. It was determined 26.75% decreasing of energy value of marmalade produced using 50% sucrose and stevia Reb D (second formulation), 53.50% decreasing of energy value of marmalade produced using stevia Reb D (third formulation) and 73.75% decreasing energy value of marmalade produced using commercial stevia sugar (fourth formulation). When the sensory analysis results were evaluated, the most liked first formulation among the marmalade samples. The marmalade samples produced by applying the second and third formulations followed the second and third places with close scores. According to the findings, it is determined that the products which are liked by consumers can be produced by using different sweeteners instead of sugar in hawthorn marmalade production.
